They live in the woods around the mountain plantation and consume coffee cherries for dessert. They are capable to distinguish the right coffee cherries with ideal ripeness. Cherries ferment in the intestines of a civet and are collected along after being defecated. The fermentation that occurs in the civet's digestive tract affects the flavour of the coffee. We use full wash process to produce Kopi Luwak.

The civets chooses the coffee fruit that is completely ripe perfectly, then eats it. Civets digestion are relative weak, so the coffee beans are not destroyed, but come out with the civet droppings. The dirt is then washed and cleaned, then dried and then processed into green bean civet coffee that is ready for roasting. We only produce Kopi Luwak from wild jungle civets. Our network of farmers every morning goes to the forest to look for civet droppings, then we collect and sort them which are still in perfect condition or not damaged.
