Kopi Luwak is an exotic arabica coffee produced from coffee cherries partially digested by the Asian palm civet (Paradoxurus hermaphroditus). They live in the woods around the mountain plantation and consume coffee cherries for dessert. They are capable to distinguish the right coffee cherries with ideal ripeness. Cherries ferment in the intestines of a civet and are collected along after being defecated. The fermentation that occurs in the civet's digestive tract affects the flavour of the coffee. We use full wash process to produce Kopi Luwak.
Java Arjuna Arabica is a very precious and expensive coffee variety. This variety of coffee plant grows at altitudes ranging from 900 to 1500 meters above sea level. The name Arjuna is derived from one of the Arjuna hills in East Java, Indonesia. In 2017, Arjuna Coffee was named the most popular coffee at the World Plantation Conferences and Exhibition, which was attended by 33 countries. Arjuna coffee has a robust caramel scent and flavor, with a balanced blend of spices and herbs. This coffee is low in caffeine and acidity, although it does have a subtle bitterness. Taiwanese and South Koreans are among those who are interested in its flavor.
We carefully prepare a 12-hour wet fermentation process of arabica coffee cherry prior to full washing process. We serve both wet and dry fermentation upon customer request. The following step involves washing the fermented coffee cherry with pure water. We ensure that the washing process has removed all mucus from the fermented coffee cherry. The clean coffee beans are then sun-dried in a greenhouse until the moisture content is 12%. It takes between five and seven days, depending on the weather. After a huller machine separates the shells from the beans, coffee beans in the form of green beans are prepared to be roasted.
