Nowadays, we usually find two types of commercial cinnamon: Ceylon Cinnamon and Cassia Cinnamon. The more expensive Ceylon cinnamon, which is mostly produced in Sri Lanka, has a milder taste and aroma. While Cassia cinnamon is widely produced, especially in Indonesia, it has a stronger aroma and taste compared to another. This cheaper type is the one we usually buy in the markets for cooking spice.
Cinnamon is obtained from the inner layer of evergreen tree, the genus Cinnamomum. The preparation process is done by peeling the outer bark to the inner bark so the layer of cinnamon can be found. The candlenut tree is large trees which height is ranged from 25 to 40 meters and diameter range up to 90 cm and echo range up to 1.5 meters. The stems are thick with gray and brownish bark. There is smooth texture with vertical stripes on the bark.
The candlenut shape is slightly oval like egg and slightly flat with size of 5-6 cm x 5.7 cm, its color is olive green and skin is covered with velvet hair. The flesh is whitish, easily unbreakable and contains with 1 or 2 seeds. The Candlenut seed is thick and hard, with size of 3 cm x 3 cm, slightly flat with whitish seed color and contain with oil.
The harvest of nutmeg takes places from seven to nine years. It will produce maximally when it reaches the age of twenty five years. This plant can also grow until twenty meters height and hundreds of years old.
When the nutmeg is harvested, it is separated from the mace, the nutmeg seeds will be dried by sun. The drying process of this nutmeg takes time from six to eight weeks. While in the process, the seed core will shrink. After the drying is finished, the seed shell will break and produce the core side known as nutmeg.

After Malacca fell into Portuguese hand, Portuguese successfully send pepper to Lisbon via Cape Town in South Africa. Aceh managed to send spices to Jeddah, via the Mediterranean Sea as well as to Europe, between 40 thousand to 50 thousand quintals per year. Acehnese traders were even able to supply pepper to various countries in Europe.
