According to the Specialty Coffee Association of America (SCAA), our coffee scores 87 points, which is graded as "specialty". It is grown in Zongolica, Veracruz (1,100 and 1,400 meters above sea level). The unique flavors and tastes are a result of the special characteristics and composition of the soils in which it is produced. Our coffee is considered of Height and Strict Height. This has always been our greatest natural quality, distinctive because of their full cup taste and little to no defects. We have always been respectful of the nature that surrounds us, that is why we use only organic methods. We are also respectful of our traditions and culture, like the Xochitlalis, a ritual where the land is asked for permission for its harvest. Always preserving them and making them known, our image is based on the attire of the indigenous women of our region. We employ about 35 people daily, in different tasks within the process and maintenance throughout the year. We have the whole process from the selection of the seed to its roasting and packing, we do not delegate or buy, everything is our production, thus we guarantee the quality.

Our Producer Partner is located in Guerrero, Mexico (close to Mexico City Airport). By far the most popular cultivated variety of okra is Clemson Spineless Okra. From November to June, plants pods are ready for harvest once they are 2 to 3" long and are covered in edible, cream coloured flowers. These are followed by meaty, strongly flavoured pods that add brilliant texture to relishes and chutneys, but also complement stews, soups, and gumbo. Plants really are spineless, and are very easy to grow.
Tomatillos can be found year-round, from Sinaloa, Michoacan and Zacatecas, Mexico. Tomatillos have a tart, fruity, and slightly herbal flavor. They're most often used in salsas and sauces, although they can also be eaten raw (and have a more acidic taste when raw). The cooked tomatillos make it more a sauce than a relish, and because it has a tasty puckeriness that deliciously heightens the flavor of whatever it goes on. *Tomatillo can be sold without husk.

Cooking jalapenos deepens and enhances their flavor all for just a few calories and a negligible amount of fat, as well as a boost of vitamin A, C and potassium. Jalapenos can be found year-round, from Sinaloa, Michoacan and Zacatecas, Mexico. *Mix loads of jalapeno and serrano peppers can be considered.
