Cinnamon is the dried inner bark of an evergreen tree called the Cinamomum Zeylunicum that is harvested during the rainy season in Sri Lanka from May to January. It is when the bark is most flexible and easiest to work with. A wild cinnamon tree can grow to 65 feet (20 meters) high, but trees used for harvesting once reached about 10 feet are pruned down at about 2 years of age to produce an abundance of finer bark-yielding growth called, ¢??coppicing¢??. Once the tree reaches 3 years of age it's harvested twice yearly following each rainy season. Our trees are hundreds of years old and can live up to another hundred or more years. Black pepper is a flowering vine in the family Piperaceae, cultivated for its fruit, known as a peppercorn, which is usually dried and used as a spice and seasoning. The fruit is drupe which, when fresh and fully mature, is about 5 mm in diameter, dark red, and contains a stone which encloses a single pepper seed
Black pepper oil is extracted from the plant Piper nigrum of the Piperaceae family. The oil is made from the unripe red fruit of the plant, while white pepper for household use, is made from the same fruit, but the berry is picked when fully ripe and the outside layer (pericarp) is removed before drying. It is a strong and sharp spicy smelling oil and is faintly reminiscent of clove oil, yet more refined. It can range in color from light amber to yellow-green and has a watery viscosity.
