Sesame(Sesamum indicum L.) is a flowering plant in the genus Sesamum, also called benne. It's labeled the queen of oilseeds because of its high oil content, delicious nutty aroma, and flavor. Sesame seed is used for a wide array of edible products in raw or roasted form and also for industrial uses such as soaps, lubricants, lamp oil, an ingredient in cosmetics; pharmaceutical uses, and animal feed . It contains a considerable amount of oil, proteins, carbohydrates, essential minerals, a high amount of methionine and tryptophan, fibers as well as secondary metabolites such as lignans, saponins, flavonoids, and phenolic compounds. Moreover, the seeds are a good source of calcium, phosphorus, and iron and are rich in vitamin B, E, and a small amount of trace elements. Sesame oil has a pleasant, mild taste and is remarkably stable. It has a high content of polyunsaturated fatty acids, oleic, and linoleic acid. Sesame oil has an excellent stability due to natural antioxidants, i.e., sesamin, sesamolin, and sesamol.
