For a coffee to be considered a specialty coffee, it must have a quality
highlighted for our customers to value and recognize.
In this sense, factors such as the origin of the coffee, the characteristics of the cup, and the Grain selection processes are decisive in defining the quality of our coffee, that's why we call it specialty coffee.
At Panem, we work hand in hand with coffee producers to take care of every detail.
We take care of every detail to the maximum, details such as the grain harvesting process,
storage, transportation, grain moisture, roasting temperature, roasting cycles, and the rest of the roasted coffee.
All of the above leads us to have premium coffee in order to reach the best quality.
According to the Specialty Coffee Association of America (SCAA), our coffee scores 87 points, which is graded as "specialty". It is grown in Zongolica, Veracruz (1,100 and 1,400 meters above sea level). The unique flavors and tastes are a result of the special characteristics and composition of the soils in which it is produced. Our coffee is considered of Height and Strict Height. This has always been our greatest natural quality, distinctive because of their full cup taste and little to no defects.
We have always been respectful of the nature that surrounds us, that is why we use only organic methods. We are also respectful of our traditions and culture, like the Xochitlalis, a ritual where the land is asked for permission for its harvest. Always preserving them and making them known, our image is based on the attire of the indigenous women of our region. We employ about 35 people daily, in different tasks within the process and maintenance throughout the year. We have the whole process from the selection of the seed to its roasting and packing, we do not delegate or buy, everything is our production, thus we guarantee the quality.
