Kopi Luwak is an exotic arabica coffee produced from coffee cherries partially digested by the Asian palm civet (Paradoxurus hermaphroditus). They live in the woods around the mountain plantation and consume coffee cherries for dessert. They are capable to distinguish the right coffee cherries with ideal ripeness. Cherries ferment in the intestines of a civet and are collected along after being defecated. The fermentation that occurs in the civet's digestive tract affects the flavour of the coffee. We use full wash process to produce Kopi Luwak.
