Cardamom is one of the world’s ancient spices. It has a very pleasing flavor and aroma. Being expensive, second only to saffron, it is seen as a ‘festive’ spice and is often adulterated & substituted by inferior related plants like Siam cardamom, Nepal cardamom etc. However, it is only Elettaria cardamomum - grown in MALABAR region in INDIA, which is the true cardamom. Cardamom comes from the seeds of a ginger-like plant. The small, brown-black sticky seeds are contained in a pod in three double rows with about six seeds in each row. The seeds are crushed or fried before use as a flavoring. It has been used as a digestive since ancient times. The Arabs attributed aphrodisiac qualities to it, the ancient Egyptians chewed cardamom seeds as a tooth cleaner; the Greeks and Romans used it as a perfume. It is a flavoring for Arab and Turkish coffee which is served with an elaborate ritual. Hotness Scale: 2

Coriander is widely cultivated in INDIA. Coriander seeds are almost spherical, one end being slightly pointed, the other slightly flattened. There are many longitudinal ridges. The color, when dried, is usually brown, but may be green or off white. The seed is generally sold dried and in this state is apt to split into halves. Seeds are sweet and aromatic when ripe. Coriander seed is generally used coarsely ground or more finely powdered, depending on the texture desired. Ground coriander is apt to lose its flavors and aroma quickly and should be stored in an opaque airtight container. Whole seeds keep indefinitely. Their flavor may be enhanced by a light roasting before use. As coriander is a mild spice it is used by the handful, rather than the pinch. The commonest use of coriander seed is in curry powders, where it is the bulkiest constituent. Coriander seeds are considered to be carminative, diuretic, tonic, stomachic, antibilious, refrigerant and aphrodisiac.

Cumin is the seed of a small umbelliferous plant. The seeds come as paired or separate carpels, and are 3-6mm long. They have a striped pattern of nine ridges and oil canals, and are hairy, brownish in colour, boat-shaped, tapering at each extremity, with tiny stalks attached. They are often confused with caraway seeds, but are lighter in colour and unlike caraway, have minute bristles hardly visible to the naked eye. They are available dried, or ground to a brownish-green powder. It has a spicy-sweet aroma and Pungent, powerful, sharp and slightly bitter flavor. The seeds should be lightly roasted before being used whole or ground to bring out the aroma. Cumin stimulates the appetite and is stomachic, diuretic, carminative, stimulant, astringent, and antispasmodic. It is valuable in dyspepsia, diarrhoea and hoarseness, and may relieve flatulence and colic. Cumin also shows promise as a natural way to increase breast size. Used in a poultice, it relieves swelling of the breast or the testicles.

FENNEL is a plant, of which all parts are edible: roots, stalks and leaves, with the spice coming from the dried seeds. Fennel seeds are 4 -8 mm long, thin and curved, with color varying from brown to light green - which is superior. They have a warm, sweet and aromatic taste and a flavor similar to a mild anise which it is mistaken for. It is traditionally considered one of the best herbs for fish dishes. It is used to flavor breads, cakes and confectionery. Fennel is thought to possess diuretic (increase in urine production), choleretic (increase in production of bile), pain-reducing, fever-reducing, and anti-microbial actions. The seeds are used as a flavoring agent in many herbal medicines, and to help disperse flatulence. The seeds, and roots, also help to open obstructions of the liver, spleen & gall bladder, and to ease painful swellings, in addition to helping with yellow jaundice, the gout and occasional cramps. India is one of the major producers and exporters of fenugreek. Fenugreek is the dried ripe fruit of an annual herb, now cultivated in India, Argentina, Egypt, Southern France, Morocco and Lebanon. The fruit is known as seed in language of commerce due to its size and shape. The seed is hard, small and yellowish brown in color and angular. A deep furrow all but splits them in two It has a pleasantly bitter taste and a peculiar odor and flavor of its own. Seeds are rich in essential amino acids. The fixed oil content of the seed is about 7 %. The fatty acids consist largely of oleic, linoletic and linolenic. The major use of fenugreek is in curry powders, Fenugreek is a digestive aid. Reducing the sugar level of the blood, it is used in diabetes in conjunction with insulin. It also lowers blood pressure. Fenugreek seeds made in gruel, given to nursing mothers increase the flow of milk.

India is a major producer of mustard which is extensively cultivated in Rajasthan, Uttar Pradesh, West Bengal, Madhya Pradesh and Punjab. Almost all types of mustard grown in India have some commercial value or other. White (Yellow) Mustard is a round hard seed, beige or straw colored. With its milder flavor and good preservative qualities, this is the one that is most commonly used. Black Mustard is a round hard seed, varying in color from dark brown to black, smaller and much more pungent than the white. Brown Mustard (Rai) is similar in size to the black variety and varies in color from light to dark brown. It is more pungent than the white, less than the black. The seed itself has no aroma. But has a sharp and fiery flavor. Powdered mustard is usually made from white mustard seed and is used for its appetizing flavor and preservative value. Mustard has been prescribed for scorpion stings and snake bites, epilepsy, toothache, bruises, stiff neck, rheumatism, colic and respiratory troubles. Hotness Scale: 3-8

Grades of Black Pepper are determined by regions they grown in- like Tellichery, Malabar, Alleppy, Lampong, Saigon, Penang and Singapore. India Pepper grows in MALABAR & TELLICHERRY that are considered top qualities due to size & maturity. Whole peppercorns keep their flavour indefinitely but quickly lose its aroma and heat after it has been ground. Peppercorns are very hard but easily ground in a peppermill. It stimulates the taste-buds causing reflex stimulation of gastric secretions, improving digestion and treating gastro-intestinal upsets and flatulence. Ajwan (pronounced aj’o-wen) is a member of the Umbelliferae family. It is mostly found in Indian cooking, as it is particularly suited to the delicate vegetarian fare found here. Ajwan is an annual herbaceous, 30 -70 cm (1 -2 ft) in height, bearing feathery leaves and red flowers. When the seeds are ripe, they are dried and threshed. Ajwan is native to India, but is also cultivated in Iran, Egypt Pakistan and Afghanistan. The grayish-green seeds are striped and curved (similar to cumin or caraway seeds in appearance), often with a fine silk stalk attached. They are usually sold whole. The seeds are often chewed on their own for medicinal value, tasting bitingly hot and bitter, leaving the tongue numb for a while. When crushed, they have a strong and distinctive thyme-like fragrance. Hotness Scale: 5
