Modified Cassava Flour (Mocaf) is made from slices of fresh Cassava logs that is fermented using enzymes and special yeast.
The fermentation process makes Mocaf has similar characterisCc with Wheat Flour without aroma and distinctive smell of dried Cassava (Gaplek).
The latest developed Cassava Flour is intended to replace the Wheat Flour due to high price.
It can be used almost similar to Wheat Flour however lower quantity is required for example to bake cakes brownies etc.
Tapioca Flour:
Drying with sunlight produces Tapioca Flour with higher viscosity and fluffier texture.
