The genus is also recognised as a potential source of very interesting biologically active products viz, carotenoids that are being used as food colourants. Tagetes (Marigold flowers) are yellow to orange red in colour are a rich sources of lutein, a carotenoid pigment. The principle colouring component of marigold flowers is lutein, a fat-soluble carotenoid, which is responsible for the yellow to orange colour to the dye.
