*the buyer signs the draft, turns over it with a notice of opening of the lc. After that, the seller returns the signed draft, thus the draft to him becomes the official contract.
The seller deposits the 2% of performance bond, and after the buyer opens the lc.
Our beans are 100% single estate origin. All of our cocoa is home grown, harvested, fermented and dried at San Juan Estate itself. Beans are sun dried (or partially natural gas slow dried during the rainy season) and polished to give a perfect shiny bean with little to no dried surface pulp. Aside from the aesthetic benefit, polishing helps inhibit any surface mold, aids in the bean grading process and contributes to a more even roast.
Fermentations are tracked to ensure optimal temperatures and pH are reached. Cut tests are performed daily to track the internal fissuring and colouration of beans.
The final product is stored in jute sacks in a sealed temperature and humidity controlled room on raised pallets.
