Bright green in color (given its higher chlorophyll content) and its notes of herbaceous scents and flavors, and fresh fruity; more powerful and fruity than olive oils collected with more mature olives.
They have somewhat more attenuated and mature nuances, and are somewhat stronger, spicier and bitter.
On the other hand, our "early harvest" oil has lower ranges of acidity and lower levels of peroxides (they measure the degree of oxidation), they have a higher concentration of polyphenols and natural antioxidants, that is, it is an oil with more beneficial effects for health.
