It is called "Extra Virgin Olive Oil" because it is obtained by crushing the fruit of certain varieties of olive cultivated, healthy, picked of suitable maturity and of such quality, that subjected to exclusively mechanical processes, a natural juice is extracted. Our Extra Virgin Olive Oil is the natural juice of the olives, obtained by grinding our Picual (20%) and Hojiblanca (80%) varieties, of unparalleled quality. The result is an olive oil of very differentiated personality, greenish gold colour, fruity, very sweet very little bitter and very little spicy.
Its high oleic properties are achieved by using sunflower seeds from specific varieties rich in oleic fatty acids. It has a maximum acidity of 0,2º and has a composition which makes it similar to olive oil.
High oleic refined vegetable oils, with natural antioxidants, this oil does not give off any froth or foam. It lasts for longer, no smoke, no smells and no froth or foam.
A combinationof virgin olive oil & refined olive oil, with a pleasant fruity flavour and great aroma.
We use fruity and low in acidity extra virgin olive oil to give aroma. The oil is then blended with refined olive oil which softens the flavour and gives colour and clarity.
We have 2 versions available: mild & intense.
Composition:
The percentage used for each type of oil is determined depending on the acidity of each oil to ensure that the end result has a maximum acidity of 0.4º for the mild oil and 1º for the intense blend.

This has a maximum acidity of 0,2º. The colour is within specific parameters. The taste is normal and smooth with characteristic aromas and flavours of sunflower oil.
This oil is for the profesional kitchen, no foam or froth is produced, it lasts for longer, gives no smoke and no aromas while frying. this is the, oil highly recommended for frying.
Palm kernel oil
The palm kernel oil is obtained from the kernel of the oil palm fruit. Its composition and properties differ significantly from palm oil. Palm kernel oil is similar to coconut oil in terms of composition, and is produced by mechanical extraction of the kernels. The quality of the oil is very good, with free fatty acids of the crude oil generally below 2%, ours is higher, but aiming towards the values indicated. It is light yellow in colour and is refined physically to produce a very light coloured oil used for both edible and inedible purposes. The oil is also semi-solid at ambient temperatures. It can be further fractionated to yield a high value fraction - such as palm kernel stearin with good melting properties. The sharp melting profile also indicates that the oil is highly suitable for confectionery applications. Due to its rapid crystallization behaviour, it is often used in enrobing or dipping products.
