The machine has been designed for the transformation and forming of food dough for the pastry productions industry. Is able to transform dough consisting mainly flour, sugar backing powder flavorings like cheese , ketchup, thymeà. These dough are transformed by the BREADSTICK MACHINE into different products according to the kind of form applied to the working head and the different dimensions, according to the selected working cycle. The machine is made by tubular stainless steel frame work with outside panels housing the machine compartment and hiding the inside actuating components. These are piloted by an electromechanical control system for managing working parameters. The parts which are in contact with the product to be processed are made of materials that fit for the food industry applications or in stainless steel. The machine interface with the user by means of a panel for setting work-cycles, a regulating system for the range of mechanical changes required by the various products to be processed. The breadstick machine is provided with a tray stacking tank and a load belt supplying the machine with the dough to be worked.
A highly improved unit operating on diesel or Gas (Propane or Natural Gas) and designed to supply a rationally and properly distributed heat for the production of an excellent quality Pita Bread. Equipped with a feeding unit conveying automatically the leavened dough sheets from the final proofer into the baking chamber of the oven. The perfect thermal insulation of the body prevents any heat loss, resulting a remarkable gas saving. The external body is entirely covered with Stainless Steel plates, giving the unit a distinguished appearance. The machine is mechanically simplified, permitting easy operation and minimizing the need of maintenance. Frame Assembly: -Made by painted steel frame and covered with Stainless Steel 1 mm thickness sheets. Conveyer assembly: -The tunnel combustion chamber made by Heat Resistant refractory bricks or Stainless steel S309 specially designed for baking thin and thick bread and completely isolated by high density Rock-Wool sheets. -All mechanical parts, such as: chain-sprockets-bearings are from the external side to insure a complete isolation for the dough pieces . -The parts subjected to direct flame are made by 6 mm Heat Resistant Stainless Steel (S309). -Heat resistant Stainless Steel conveyer chain for long life trouble free operation. -Heat resistant Stainless Steel (S309) conveyer plates for high quality bread and long life trouble free operation -Production speed controlled by mean of frequency inverter. Burner: -High quality diffusion flame burner working on Gas that compliance with safety and health regulations with respect to ISO and FDA Norms. Thermal Power: from 180 to 400 Kw. -Optionally: Electronically modulated burner where the fan and the fuel pump are equipped with inverter.
The exclusive concept of the machine with a new regulation system guarantees high quality dough and the optimal precision for each dough. This machine was expressly built to flattener all types of dough and for variable sizes (from10 cm to 50 cm) with variable dough thickness 1 to 8mm. Feeding Conveyer : -Made by food grade non stick belt witch delivers the dough to the first flattener. Conveyer frame made by 3 mm stainless Steel sheets. -Easily removable Stainless Steel flour tank mounted of the rear side of the conveyer frame and equipped with independent motor to reduce mechanical connection. -Fitted with removable Stainless Steel plate for flour and dough decay accumulation. Frame : -Optional: Stainless Steel frame or Painted Steel frame and covered with 1.5 mm Stainless sheets. First intermediate flattener: -Dough pieces incoming form the first conveyer are flattened between Four Hard chromed cylinders. -The frame made by 5mm Stainless Steel sheets. -All mechanical parts, such as: chain-sprockets-bearings are from the external side of the flattener frame, and well covered with 2 mm Stainless Steel, to insure a complete isolation for the dough pieces and maximum security measures and safety for the workers.
