Ground cardamom is often used to give tea, curries and rice a flavour boost. A small amount is often used, as too much of it will overpower milder flavours in the dish. This flavourful spice is packed with health benefits and has been used in traditional medicine for centuries. Some evidence shows that this herb has antioxidant properties and has the ability to produce compounds that may help fight cancer cells. It is used in karanji (a small pastry pocket stuffed with poppy seeds, grated coconut, sugar, nuts and cardamom) and mithai (an assortment of Indian sweets).
The oily component of this aromatic spice is very high in cinnamaldehyde, a compound scientists believe is responsible for most of cinnamon's powerful effects on health and metabolism. A study comparing 26 spices placed cinnamon at the top for its high amount of antioxidants, surpassing garlic and oregano. Its anti-inflammatory properties may prevent the formation of free radicals that damage your cells and nervous system, and also help to reduce cholesterol levels. It is often used in keema (an Indian spiced lamb), chicken dhansak (an Indian curry) and namkeens (Indian savoury snacks)

Leafy shoots of the cardamom plant arise 1.5 to 6 metres (5 to 20 feet) from the branching rootstock. Flowering shoots, approximately 1 metre (3 feet) long, may be upright or sprawling; each bears numerous flowers about 5 cm (2 inches) in diameter with greenish petals and a purple-veined white lip. The whole fruit, 0.8 to 1.5 cm, is a green three-sided oval capsule containing 15 to 20 dark, reddish brown to brownish black, hard, angular seeds. The essential oil occurs in large parenchyma cells underlying the epidermis of the seed coat. The essential oil content varies from 2 to 10 percent; its principal components are cineole and terpinyl acetate.

The pods are used as a spice, in a similar manner to the green Indian cardamom pods, but with a different flavor. Unlike green cardamom, this spice is rarely used in sweet dishes. Its smoky flavor and aroma derive from traditional methods of drying over open flames.
In the culinary arts, cardamom is a spice made from the seed pods of various plants in the ginger family. Cardamom has a strong, pungent flavor and aroma, with hints of lemon, mint, and smoke. Cardamom pods contain a number of seeds, but the entire cardamom pod can be used whole or ground. There are two main types of cardamom: black cardamom and green cardamom. Cardamom is used mainly in Indian cooking as well as Middle Eastern cuisine. In Indian recipes, whole cardamom pods are used in preparing basmati rice and various curries. In Middle Eastern recipes, ground cardamom is used in preparing certain desserts. Interestingly enough, one of the countries that consumes the most cardamom is Sweden, where cardamom is employed to season everything from baked goods to hamburgers and meat loaves.
Cinnamon is the dried bark of various laurel trees in the cinnamomun family. One of the more common trees from which Cinnamon is derived is the cassia. Ground cinnamon is perhaps the most common baking spice. Cinnamon sticks are made from long pieces of bark that are rolled, pressed, and dried. Possibly most the common baking spice, Cinnamon is used in cakes, cookies, and desserts throughout the world. Cinnamon is also used in savory chicken and lamb dishes from the Middle East. In American cooking, Cinnamon is often paired with apples and used in other fruit and cereal dishes. Stick Cinnamon is used in pickling and for flavoring hot beverages.

Cinnamon
Cinamon, also spelled cinnamon, cultivated in Vietnam and exported from India offers a unique taste profile prized by connoisseurs. Vietnamese cinnamon, a type known as Cassia cinnamon, is distinguished by its intense aroma and flavor, with subtle hints of spice and warmth. Indian exporters source high-quality Vietnamese cinnamon sticks, quills, and powder, ensuring consistent quality and purity. Cinnamon, also spelled cinnamon, boasts a rich history as a coveted spice, gracing tables and medicinal practices for millennia. Vietnam has emerged as a key producer of this aromatic bark, and Indian exporters stand to benefit from its unique qualities. Here's a detailed exploration of Cinamon Vietnam, highlighting its characteristics, export potential, and considerations for Indian businesses. The Allure of Vietnamese Cinnamon: Vietnamese cinnamon, primarily Cinnamomum loureiroi, is known for its distinct flavor profile. Compared to its cousin, Ceylon cinnamon (Cinnamomum zeylanicum), Vietnamese cinnamon packs a stronger punch. It offers a more intense, almost peppery taste with warm undertones. This quality makes it a favorite in savory dishes like curries, pho, and stews. Additionally, Vietnamese cinnamon boasts a higher content of cinnamaldehyde, the essential oil responsible for its characteristic aroma and some health benefits. Sustainability: As with any agricultural product, sustainable sourcing practices are important. Indian exporters can look for Vietnamese suppliers who prioritize ethical farming methods. Value Addition: Explore opportunities for value addition, such as offering pre-blended spice mixes or customized grinds to cater to specific market demands. By carefully considering these factors, Indian exporters can unlock the full potential of Vietnamese cinnamon and establish a thriving export business. The fragrant allure of this Vietnamese spice, coupled with Indian expertise, can create a winning combination in the global spice trade.
