India is one of the leading producers of wide variety of sesame seeds ranging from red sesame, black sesame to white sesame. Sesame seeds are used for direct consumption in various food items. Different variety of sesame seeds have different proportion of oil content varying from 40-50%. Sesame seeds are majorly supplied in domestic and international markets for oil extraction.

Produced during khariff andrabi season the sesame seeds are available throughout the year and are the oldest condiment that is being consumed by humans. Sesame seeds are an excellent source of copper, manganese, calcium, magnesium, iron, phosphorus, vitamin B1, zinc, molybdenum, selenium, and dietary fiber. Sesame seeds are consumed widely by vegetarian as it is rich in vitamin E.
