Spiny Lobsters are wild caught in Bahamian Waters using hand spears. Lobsters are headed immediately after capture to reduce the risk of blood soaking into the meat. Tails are bagged and frozen.
Queen Conch are picked up from the ocean floor by hand. The tropical mollusk is removed from shell, clean skinned then bagged.
