While sugars from different palms may have slightly different compositions, all are processed similarly and can be used interchangeably. Palm sugar is the crystallized nectar of the coconut palm tree blossom (Cocos nucifera), made by boiling the flowerâ??s sap until it thickens. It composed of sucrose 70%, glucose and fructose. With Glycemic Index low as 35 it is absorbed slowly by the body and will not cause sugar spike for diabetic people.
