Walnut kernel also called Akhrot Giri is the edible part of walnut . Walnut is one of the major agricultural product of kashmir. Walnut trees are found all over the Kashmir.
We have 10 grades of walnut kernel.� We grade walnut kernel on the basis of two criteria- texture and shape.
On the basis texture we make five grades
1. Super snow white
2. Snow white
3. Milky white
4. Light brown
5. Dark brown
On the basis of shape , we categorize as
1. 2-piece
2. Quarter
3. Broken
4. Pieces
Thus theoretically there are 20 grades possible but we make only ten grades
