Asafoetida is the dried latex (gum oleoresin) obtained from the roots of Ferula plants. It is commonly dried, ground into a coarse, yellow powder, and used for either culinary or medicinal purposes.
Asafoetida is used for breathing problems including ongoing (chronic) bronchitis, H1N1 "swine" flu, and asthma. It is also used for digestion problems including intestinal gas, upset stomach, irritable bowel syndrome (IBS), and irritable colon.


The Bay leaf is an aromatic leaf commonly used in cooking. It can be used whole, either dried or fresh, in which case it is removed from the dish before consumption, or less commonly used in ground form.
Never substitute a European Bay leaf when Indian Bay leaves are specified in a recipe as the flavor is entirely different.

Cardamom is widely cultivated at various elevations in South Asia. It is ranked high among the world's most expensive spices by weight. These seeds contain the essential oil, which gives it its flavor and scent, with hints of mint and lemon.

Cassia and Cinnamon both come from the bark of a tree that is a member of the laurel family. To produce cinnamon, the tree's bark is harvested, dried and fermented, then its outer layer is removed. As it dries, the inner bark curls into thin strips, or quills.
Cassia is harvested in a similar process as cinnamon, but it has a stronger flavor. Real cinnamon sticks or quills curl in a telescopic form, in a perfect circle. But, cassia sticks curl inward from both sides, appearing like a scroll.


It looks similar to fennel and cumin seeds and is highly fragrant, smelling like thyme. Its taste, however, is more like oregano and anise due to the bitter notes and strong flavor. Because of its pungency, a little goes a long way. Grown in India and Iran, ajwain, also known as carom seeds or bishop's seed.

Cloves are the immature unopened flower buds of a tropical tree. When fresh, they are pink, when dried they turn to a rust-brown color which is a sign of essential oil in it. Fenugreek is a robust herb and has light green leaves. The plant produces slender, beaked pods, each pod contains about 10 to 12 small, hard yellowish-brown seeds. The seed is produced as a spice. Fenugreek grows best in well-drained loamy soil in mild climates. The crop matures in about 3 â?? 4 months after sowing.
Fenugreek Seeds help to improve insulin function and reduce cholesterol and triglyceride levels, which is beneficial in treatment of type 1 and 2 diabetes. Mustard seeds are usually about 1 to 2 millimeters (0.039 to 0.079 in) in diameter and may be colored from yellowish white to black. Mustard seeds are used as a spice in the South Asia.
