India is the largest producer and consumer of ginger contributing about 35% (1.07 Million MT: 2016-17 FAO STAT) of total global production. Ginger produced in NER was reported to have higher oil (1.6-2.5% versus 1.5-2.0%) and oleoresin content (5.9- 8.56% versus 5-8%), low fiber content than ginger from other parts of India.
