Green pods of cardamom known as Queen of Spices Sri Lanka's Cardamom grows beneath the cozy roof of rain forests situated in mid part of the country. The cardamom pods contains smallseeds that should ideally be dark gray or black. Cardamom, both shell and seeds easily powdered in a mortar or in a coffee grinder for use in curries & desserts.

Cardamom refers to several plants of the genera Elettaria and Amomum in the ginger family Zingiberaceae. Both genera are native to India, they are recognised by their small seed pod, triangular in cross-section and spindle-shaped, with a thin papery outer shell and small black seeds. Elettaria pods are light green while Amomum pods are larger and dark brown. The word cardamom is derived from the Latin cardamomum,[1] the latinisation of the Greek (kardamomon),[2] in turn from (kardamon), "cress"[3] +; (amomon), a kind of an Indian spice plant.[4] The earliest attested form of the word kardamon is the Mycenaean Greek ka-da-mi-ja. Black cardamom is often erroneously described as an inferior substitute for green cardamom by those unfamiliar with the spice; actually it is used best in hearty meat stews and similar dishes.The pods are used as a spice, in a similar manner to green cardamom pods, but those have a different flavour. Unlike green cardamom, this spice is rarely used in sweet dishes. Its smoky flavour and aroma derive from traditional methods of drying over open flames and render it more suited for spicy dishes.
