Whey Permeate Concentrate is made from fresh, pasteurized whey, remaining after cheese making. The proteins are extracted from the whey using ultrafiltration. The liquid concentrate is then further concentrated and dried. Whey protein concentrate powder (WPC) is available with between 35 % to 80 % whey protein.
In the food processing industry WPC is used in the manufacture of baked products, desserts, sauces, chocolate, milk beverages and sports nutrition and diet food, for example.
