Cinnamaldehyde Cinnamaldehyde(CAS No. 104-55-2) is an oily yellow liquid at room temperature with a cinnamon odor and sweet taste. Cinnamaldehyde is mainly obtained from the steam distillation of the oil of cinnamon bark and it also can be made synthetically. Cinnamaldehyde is mainly used as a flavoring agent in liquid refreshments, ice-creams, chewing gums and candy. It is also used in perfumes to recreate the magic of fruity and interesting fragrance ranges. What's more, it can be used to prevent corrosion in steel and other ferrous alloys in corrosive fluids like hydrochloric acid.
