Tejpatta (Bay Leaf) has aromatic leaves which are used for culinary and medicinal purposes. It is thought to have been one of the major sources of the medicinal plant leaves known in classic and medieval times as malabathrum (or malobathrum). True tejpat leaves impart a strong cassia- or cinnamon-like aroma to dishes. Botanical name : Cinnamomum tamala Family: Lauraceae Other Names : Indian bay leaf, tejpat, tejapatta, Malabar leaf, Indian bark, Indian cassia or malabathrum.
Product Specification : TejPatta Malabathrum, also known as Malobathrum or Malabar leaf, is the name used in classical and medieval texts for the leaf of the plant Cinnamomum tamala (sometimes given as Cinnamomum tejpata). The leaves are mentioned in the 1st century Greek text Periplus Maris Erytraei as one of the major exports of the Malabar coast which is the present Kerala coast. In the language of Kerala that is, Malayalam, the plant is called 'Vazhana'. It is also known as 'Edana' in Malayalam.
The Bay leaf is an aromatic leaf commonly used in cooking. It can be used whole, either dried or fresh, in which case it is removed from the dish before consumption, or less commonly used in ground form. Never substitute a European Bay leaf when Indian Bay leaves are specified in a recipe as the flavor is entirely different.
The nutmeg tree is a large evergreen, it produces two spices mace and nutmeg. Nutmeg is the seed kernel inside the fruit and mace is the lacy covering (aril) on the kernel. Nutmegs are usually sold without the mace or hard shell. Nutmeg is available whole, cracked and ground. Nutmeg and mace are used in soups and in egg, fish, chicken, cheese, root vegetable dishes. They are also used in bakery items like biscuits, cookies, puddings, pastries, fruit salads, milk drinks etc.
Cloves are the immature unopened flower buds of a tropical tree. When fresh, they are pink, when dried they turn to a rust-brown color which is a sign of essential oil in it. They resemble small nails, with a tapered stem (Clove translates to nail in Spanish). The large end of the clove is the four-pointed flower bud. Clove essential oil has received considerable interest due to its wide application in the perfume, cosmetic, health, medical, flavoring, and food industries.
