White tea comes from leaves of the Camellia Sinensis which have been incompletely processed. The plucking method of the leaf is very specific. That is to say, the two leaves and a bud are plucked just before sunrise to maintain the moisture in the leaves which has built up over the night. White tea is known to be one of the most delicate tea varieties because it is so minimally processed.
