Description New Zealand Honey Co. Wild Beech Forest Honeydew Honey comes from the untouched, native, ancient beech forest that stretches along the base of the Southern Alps in the South Island of New Zealand. There is no other activity here other than beekeeping, resulting in a honey as pure and natural as you will ever find. Aphids that live on the beech trees eat the sap and from it they produce a sugar-like substance that they leave in drops on the bark of the tree - these drops sparkle in the sunlight, hence the name honeydew. The bees love this honeydew, collect it and produce a fantastic end product. This is what makes Wild Beech Forest Honeydew uniquely different from other honeys that are made from the nectar of flowers. Our Wild Beech Forest Honeydew Honey is a fine, silky smooth honey with a deep gold-chestnut red colour. It has a clean and refreshing flavour thatâ??s not too sweet, with hints of vanilla and malt. The Wild Beech Forest Honeydew has a spicy orange peel aroma and has a consistency similar to that of treacle. Spanner Crabs: Wild caught in Australian coastal waters. Are spanner crabs good to eat? "Spanner crab in particular has a clean oceanic taste, and is much gentler in flavour than mud crab," says Josh Niland of Sydney's Saint Peter. "It has wonderful sweet meat that's easy to work with." SPECIES DESCRIPTION Available wild-caught, these marine dwellers are found from close inshore to at least 100m, usually buried in sand from where they attack small bottom-dwelling fish. Their long, almost goblet-shaped, bright orange shells (even when uncooked) and spanner-shaped front claws are quite distinctive. Found around most of the Australian coast they are caught commercially, mainly using dillies or crab pots. OTHER NAMES Frog Crab, Red Frog Crab, Kona Crab (USA). FAMILY Raninidae (Spanner Crabs). SEASON Available from January to October, peaking from July to October with the fishery closed for most of December. SIZE AND WEIGHT Commonly about 8.5cm in carapace width and 400g, but can grow to 15cm and 900g. RELATIONS Only commercially fished member of the Raninidae family. The shell is burgundy-orange even when uncooked, turning a brighter orange when cooked. The flesh is translucent when raw and white when cooked, it has a distinctive, sweet flavour, low oiliness and is soft and moist. Australia catch is exported (mostly live). The brown crab is the biggest edible crab that occurs naturally in Norwegian waters. Although the red king crab and snow crab are bigger, both of them were introduced to Norwegian waters by humans. Measured at the top of its shell, it is usually around 9 cm long and 15 cm wide, but under favourable circumstances, it can grow to an impressive width of 25 cm. Brown Crab ï?§ Scientific name: Cancer pagurus ï?§ Also know as: Edible Crab ï?§ Size: Up to 12 inches (30cm) across carapace ï?§ Distribution: Found throughout the North East Atlantic. The brown crab is a large species of crab found all around the British Isles. It is extremely commercially valuable meaning that a significant fishery has built up to catch this species. Description The brown crab is by far the largest crab species in British waters, with the carapace of a fully grown adult being around 20cm across, and in exceptional specimens can be 30cm across and weigh 9lbs. The upper shell of the crab is oval-shaped and usually an orange-red colour with paler undersides. Like all of the crab species in British waters they have eight legs and two, very large and powerful claws with the pincers usually being tipped black. One of the most distinguishable features of this species of crab is the pattern which runs along the edge of the carapace which is usually described as resembling a pie crust. Due to the very large and powerful claws, the brown crab can cause a very painful nip to humans it comes across. Distribution and Habitat The brown crab is distributed all around the British Isles and is found in areas where there are rocks and weed to provide cover. The crab will hide in cracks and under weed and emerge to forage for food. They are found throughout European waters with their distribution ranging from Norwegian waters down to the northern coastline of Africa, although they only have a very limited presence in the Mediterranean and are absent from the Black Sea. Commercial Importance Brown crabs are extremely commercially important and the brown crab fishery in British waters is one of the largest crab fisheries in the world, although a large proportion of the catch is exported to France and Spain. Around one-third of the overall weight of the crab is edible as crab meat. Despite the importance of this species there is very little known about overall stock numbers or the extent to which current fishing intensity is depleting stocks.
