Potato starch is bland, making it perfect for use in both savory and sweet recipes, as it won’t affect flavor. Since potato starch thickens more quickly than grain starches, it’s best to use it toward the end of cooking. Sauces thickened with root starches like this one appear more translucent than those thickened with grain starches, which typically creates an opaque look. Potato starch should never be boiled since it will lose its thickening ability.
