Vanilla is a word that has Spanish origins and comes from the word ‘vaina’, literally translating to ‘little pod’. It is a flavoring extracted from orchids of the Vanilla genus, mainly the Mexican flat-leaved Vanilla. Since the only natural pollinator is a Mexican species of bee, hand pollination is required to grow it in any other countries other than Mexico and South America.
Due to this labor intensive cultivation, Vanilla is the second most expensive spice in the world. Vanilla may be sold as whole pods, powder, extract or as vanilla sugar mix. There are many types of vanilla due to the related species of orchids that produce vanilla; Bourbon Vanilla, Mexican Vanilla, Tahitian Vanilla, West Indian Vanilla. Sri Lanka has Bourbon Vanilla.
Vanilla grows as a vine and climbing up an existing tree, pole, or other support. The plant is growing in the hill country conditions in Sri Lanka.
Vanilla is an economically important crop as it is the source of natural vanillin. So, Vanillin is the main product extracting from vanilla. It is being used as a flavor ingredient in the confectionery industry, perfumery, and pharmaceutical industries.

Vanilla Beans are the long, greenish-yellow seed pods of the tropical orchid plant, Vanilla planifolia. Before the plant flowers, the pods are picked, unripe, and cured until they
re dark brown. The process takes up to six months. To obtain Pure Vanilla Extract, cured Vanilla Beans are steeped in alcohol. Vanilla contains chemicals that are high in flavor and fragrance. Vanilla bean extract is used a flavoring in confectionery and baking. Essential oils extracted from the plant are also used in the perfume industry.
