Cold water solubility is achieved by introducing carboxymethyl groups (-CH2-COOH) along the polysaccharide chain, which makes hydration of the molecule possible in cold water. Origin and Distribution Tamarind is originated in Madagascar and is now extensively cultivated in India, Myanmar, Bangladesh, Malaysia, Sri Lanka, Thailand, several African, Central American and South American countries.
