Our dried pineapples come from Limestone Hill Farm, near Bathurst, one of the original 1820 Settler farms in the Eastern Cape. This Cayenne variety is much larger than the Queen variety grown in KwaZulu-Natal, which is mainly used for fresh eating. Cayenne pineapples used to be associated with the canning and juice industries, but together with Jono Bradfield of Limestone Hill, we developed what we believe is the best dried pineapple on the market; large, bright yellow rings with a delicate sweet and sour balance. Delicious!

The process of preparing star dry fruit in the oven is basically the same process as is used for other fruits. You should use ripe, but not overly ripe fruit. The slices should be the same thickness. Uniformity is crucial to all the slices drying properly in the same amount of time. Place the slices of fruit on a baking sheet lined with parchment paper. Put the pan of fruit on the middle rack of an oven set at 200 degrees. Drying time can take between 3 to 6 hours, depending on how watery the fruit is. Be sure to stir the fruit and check for dryness about every 30 minutes. When the fruit is dry, allow it to cool completely before storing it in airtight containers.
Dehydrated Star Fruit
Dried carambola is easy to prepare in a dehydrator. The fruit should be cut into 1/4 or 1/8 inch slices, spread onto a dehydrator tray, lightly sprayed with lemon juice, and dehydrated at 125 degrees for 10 hours. If the fruit feels sticky, dry it longer. Properly dehydrated star fruit will feel dry.

Our sweet Turkish apricots come from the Malatya region in Turkey. About 95% of the worldâ??s dried Turkish apricots come from the Malatya area where they are irrigated from the Euphrates River that has its origin in the surrounding Anatolian Mountains. Other than the different flavour profiles; what makes these apricots different from the Royals we grow locally is that they are dried whole rather than halved first and then dried. In Turkey, apricots are often grown and sun-dried by small-scale family-run orchards using traditional methods before they are shipped off around the world â?? some of which end up right here in Ceciliaâ??s Farm.

Our 2023 unsulphured Blenheim apricots are dried naturally in the sun.
They are cut, put on trays, dried for 7 days, scraped, washed, and redried.
This year's unsulphured are the best we've ever done....magnificently rich in color and flavor.
They can be frozen or refrigerated for years.
We keep them very dry......but you can soften them up with a little water.
The Blacker they are.....the sweeter they are.
We used a lot our organically grown apricots.........spectacular color and taste.
