Coco Stick st Lucian classification of tea as a hot drink. The process of creating this delicacy begins when cocoa pods are picked and then fermented for three weeks. The cocoa is then roasted inside a clay pot with the sun. When fully roasted, the beans are left to cool and the shells removed. They are then ground into a paste, rolled on a flat surface to get the cocoa stick. Once the cocoa stick dries, it is grated and steeped in boiling water, along with your own preferred balance of spices, selecting from bowls of cinnamon, cardamom, fennel, nutmeg, bay leaf, and more. Sugar is added and a little milk or cream and some flour to make it thicker and more filling

Dried Cocoa Beans - 100% pure and natural Cocoa powder - 100% pure and natural Product Origin - West Africa Cameroon
Sun dried fine flavour cocoa beans. Packaged in 50 Kg GRAINPRO bags. Selected by hand, no inclusion of stones, bugs, bad beans. 100% usable. Dried to 7% moisture.
Our beans are 100% single estate origin. All of our cocoa is home grown, harvested, fermented and dried at San Juan Estate itself. Beans are sun dried (or partially natural gas slow dried during the rainy season) and polished to give a perfect shiny bean with little to no dried surface pulp. Aside from the aesthetic benefit, polishing helps inhibit any surface mold, aids in the bean grading process and contributes to a more even roast. Fermentations are tracked to ensure optimal temperatures and pH are reached. Cut tests are performed daily to track the internal fissuring and colouration of beans. The final product is stored in jute sacks in a sealed temperature and humidity controlled room on raised pallets.
