Ginger is a common spice used worldwide. It has a tropical flowering plant which is biennial or perennial in nature. The reed like ginger herb reaches a height of 3 feet. It’s cultivated by sowing small pieces of the rhizome weighing around 15g with at least one healthy bud in the soul rich in humus, 4-5cms below the soil. The plant is cultivated in the tropics and main producing countries include China, India, Nigeria and Peru. India is the largest producer of ginger at around 700,000 MT accounting for about 34.6% of the world production.
