Licorice Extract (succus liquiritiae) is the natural, concentrated juice obtained by water and steam extraction out of the licorice roots (Glycyrrhiza glabra L.). Glycyrrhizin, the active component contained in the roots, is a strongly sweetening glycoside. Licorice Extract is used in a wide range of industrial applications for its flavorings, sweetening a/o debittering properties as well as, occasionally, for its natural coloring power.
