As a matter of fact, raw unprocessed chocolate can have up to 4 times more antioxidants than green tea! This is just one of the many health benefits of cacao nibs. Remember, in order to benefit from chocolateâ??s health benefits, you must eat it as close to its raw form as possible. Whole raw cacao nibs are best. When you eat commercially produced chocolate, you lose a lot of the health benefits!
Cocoa butter, also called theobroma oil, is the natural edible fat from the cocoa bean, extracted during the chocolate manufacturing process and separated from the cocoa mass or liquor by using hydraulic press.
Cocoa Liquor, also known as "Cocoa paste" is the product obtained from the mechanical disintegration of clean and peeled cocoa beans, without extracting its components or adding any type of element. Cocoa beans selected to obtain Licor de Cacao is roasted, husked, ground and refined.

Our beans are 100% single estate origin. All of our cocoa is home grown, harvested, fermented and dried at San Juan Estate itself. Beans are sun dried (or partially natural gas slow dried during the rainy season) and polished to give a perfect shiny bean with little to no dried surface pulp. Aside from the aesthetic benefit, polishing helps inhibit any surface mold, aids in the bean grading process and contributes to a more even roast.
Fermentations are tracked to ensure optimal temperatures and pH are reached. Cut tests are performed daily to track the internal fissuring and colouration of beans.
The final product is stored in jute sacks in a sealed temperature and humidity controlled room on raised pallets.
