Palm oil is extracted from the palm nut kernel, it is extracted by pressing and crushing. Crude palm oil has a naturally high level of saturated fat. This is different to olive oil and other vegetable oils which are considerably higher in unsaturated fat. Palm oil has an equal proportion of both saturated and unsaturated fatty acids. It is also an excellent source of vitamin e. This makes palm oil a perfect base ingredient in many items and products.
Oil produced from palm fruit is called red palm oil or just palm oil. It is around 50% saturated fat considerably less than palm kernel oil and 40% unsaturated fat and 10% polyunsaturated fat. In its unprocessed state, red palm oil has an intense deep red color because of its abundant carotene content. Like palm kernel oil, red palm oil contains around 50% medium chain fatty acids, but it also contains the following nutrients:
