Desi chana, kala chana is a small dark brown coloured chana with a rough coat, cultivated mostly in india and others part of indian continent, as well ehopia, mexico and iran. It is smaller version of regular pale yellow chickpea although it has a brown skin it remain yellow underneath, and has a nutty flavor and starchy texture when cooked. It is very versatile legume with an important role in many middle eastern and indian dishes.
There are two types of chickpeas: desi and kabuli. Desi contains smaller, darker seeds and have more of a rough coat. Kabuli is a larger, lighter colored bean with a smoother coat.
Chickpeas come in a variety of colors – Green, black, brown and red, though the most popular and recognized color is beige. They have a buttery texture and nutty taste. Most chickpeas found in the grocery (especially canned garbanzos) are cream-colored and relatively round.

Mature chickpeas can be cooked and eaten cold in salads, cooked in stews, ground into a flour called

and shaped in balls and fried as falafel, stirred into a batter and baked to make farinata or panelle.
