Gum Arabic or Acacia is the dried, gummy exudate from the stems or branches of Acacia or related species. The trees which produce commercial grades of Gum Arabic grow in different parts of Gum Arabic dissolves readily in hot or cold water. Gum Arabic is compatible with other plant hydrocolloids as well as carbohydrates and proteins. Its major use in the food industry is to impart viscosity, body, and texture to a variety of foods.
