For making soft idlis few things needs to be consider. Texture of the batter matters a lot, which depends on the type of rice we are using for idlis. Use idli rice for making the batter, in case if you are not able to get idli rice, then you can use parboiled rice or any other rice with short to medium size. Long grain rice is not recommended for idlis. Idly are a type of savoury rice cake, originating from the Indian subcontinent, popular as breakfast foods throughout India and northern Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice.
