All over the world, mustard is used for its appetising flavour and preservative value. It is also used in medicines. India is a major producer of mustard which is extensively cultivated in Rajasthan, Uttar Pradesh, West Bengal, Madhya Pradesh and Punjab India, mustard is used largely for tempering food.
