This locally harvested anchovy is boiled, dried and made into a sheet for food decoration.
It can be used for sushi, rice ball or other Japanese cuisine.
Or it can be seared and spread cream cheese over for a light snack.
Anchovy is caught in the lake Hamana, Shizuoka Pref. Japan.
Season for it starts in April for few months.
Caught by specially made net and fresh anchovy is brought to processing plant near the lake.
It is boiled and spread into the post card size mesh frame for sun drying for few days.
