RAISIN Raisin belongs to the family name vitaceae, they are the dried form of grapes in the size of pebbles. They are used in baking cooking and brewing industry. The skin of the raisin is wrinkled with sugary sweetness taste. Based on the type of raisin used and the drying method the raisins can vary in size and colors like green, golden, brown and dark. The Major types of raisins are >Black Raisin: This raisin makes low calorie diet and rich in taste, they are prepared by processing of the fruit in full sun for drying purpose and make them dark. They are used in Indian deserts and rice dishes like pulao. >Malayar Raisin: The are made by processing Thompson grapes, initially they are green color and gets darkens on drying. They are used in cookies, Pies and puddings. >Golden Raisin: They are also made by processing Thompson grapes by oven drying in order to avoid the darkening sunlight effect and treated with sulphur dioxide to preserve the color.
