Cubeb pepper, also known as Java pepper or tailed pepper is the fruit of the Piper cubeba plant which is a native Indonesian spice and is mostly produced on Java Island. It is called tailed pepper because of its unique tail-like stalk. Compared to black pepper, cubeb has a similar shape and color with a more complex flavor profile thanks to its essential oil in the form of cubebine and some terpenes. First, it will give a slightly peppery sensation then followed by eucalyptus, floral and citrus notes, and leaves a bitter aftertaste. Cubeb pepper is commonly used in spice mix, marinades and rubs for meats, sweet and savory dishes, beverages, herbal remedies, perfume industries, and pharmaceutical industries. They can be blended with black, white and green peppercorns in a mill or added to dishes instead of conventional pepper.
