946;-Carotene (C40H56) is a member of the carotenoid family of isoprenoid compounds, characterized by their polyunsaturated nature and antioxidant properties. These are naturally occurring yellow, orange and red pigments found in many fruits and vegetables and collectively called as carotenes or carotenoids. Carotenoids are defined by their chemical structure having 40-carbon chain. The hydrocarbon carotenoids are known as carotenes, while oxygenated derivatives of these hydrocarbons are known as xanthophylls.
