Cubeb pepper, also known as Java pepper or tailed pepper is the fruit of the Piper cubeba plant which is a native Indonesian spice and is mostly produced on Java Island. It is called tailed pepper because of its unique tail-like stalk. Compared to black pepper, cubeb has a similar shape and color with a more complex flavor profile thanks to its essential oil in the form of cubebine and some terpenes. First, it will give a slightly peppery sensation then followed by eucalyptus, floral and citrus notes, and leaves a bitter aftertaste. Cubeb pepper is commonly used in spice mix, marinades and rubs for meats, sweet and savory dishes, beverages, herbal remedies, perfume industries, and pharmaceutical industries.
