They have a dominant gene that causes hyperpigmentation (Fibromelanosis), making the chicken entirely black; including feathers, beak, and internal organs. Ayam means "chicken" in Bahasa Indonesia. Cemani refers to the village on the island of Java where this breed of chicken originates.
