Description
ISFAT™ H2100EM is a refined, fractionated, hydrogenated vegetable fat of lauric origin.
Application
ISFAT™ H2100EM is a non-tempering fat suitable for the production of premium compound chocolate for both molding and coatings. The hard consistency of ISFAT™ H2100EM provides a crisp snap and excellent gloss retention properties to the end products. Additionally, the steep and complete melting profile of ISFAT™ H2100EM results in a cooling sensation and a pleasing mouthfeel with excellent flavour release. Since the compatibility of ISFAT™ H2100EM with cocoa butter is limited, low-fat cocoa powder (10-12% fat) should be used.
