The thermal monitoring temperature kit includes a mobile cart, IP thermographic camera, camera software, mini PC Quad core with Microsoft windows 10 professional 64bit, 6-port POE+ network switch, 24-inch 1080p LED monitor, LTE WAN network used for remote support and notifications. iS3 shall pre-configure the system for you so your thermal temperature monitoring system is ready to go upon arrival to your site. Only requirement from the customer is to provide 120v power and position system at an ideal location.
Our beans are 100% single estate origin. All of our cocoa is home grown, harvested, fermented and dried at San Juan Estate itself. Beans are sun dried (or partially natural gas slow dried during the rainy season) and polished to give a perfect shiny bean with little to no dried surface pulp. Aside from the aesthetic benefit, polishing helps inhibit any surface mold, aids in the bean grading process and contributes to a more even roast. Fermentations are tracked to ensure optimal temperatures and pH are reached. Cut tests are performed daily to track the internal fissuring and colouration of beans. The final product is stored in jute sacks in a sealed temperature and humidity controlled room on raised pallets.
