The cane used in our Muscovado Gold Sugar is grown exclusively from Hacienda Elsa, a 24-hectar sugar plantation exclusively for Muscovado, that has been planted to sugar even before 1907, when the plantation was purchased by its present owners. The mill is sited in one of the oldest Muscovado Mills in Negros Occidental, the heartland of the sugar industry in the Philippines. The Hacienda Elsa plantation is home to one of the most fertile volcanic soils suitable for sugar cane culture All Natural & Artisanal How is it produced? Our Muscovado Gold is All Natural. Being entirely hand-processed and artisanal, there are no centrifugal machines used in the processing of Muscovado Gold. After a selection of the finest canes available, the sugarcane juice is extracted through a crusher and is filtered through out the process by using a stainless slotted spade. It is subjected to continued boiling at an event temperature, in a series of stainless steel vats, manually fired from a brick lined, organically fuelled furnace found underneath the vats. Dried organic bagasse (or left over fiber from crushed sugar cane) is fed into the furnace found underneath the vats by a skilled FUGONERO who sees to it that bagasse is fed regularly into the furnace to maintain a constant firing temperature. The resulting filtered juices, through constant boiling and regular stirring over a period of time, will thicken into a syrup-like consistency and will then be poured onto a cooking trough and stirred again by hand using a stainless steel spades until it turns into fine powder.
